Easy Crock Pot Three Bean Chili

Fall is officially here, which means it’s time for warm and filling comfort foods. When I hear the words comfort food I automatically think “fattening”. But I want to say that just because a food is comforting, it doesn’t have to mean that it’s unhealthy. Case in point: Here is a very fast, easy, healthy and comforting meal that you can make in your slow cooker using a few cans of Bush’s Beans (available at Walmart) and a few other household staples. Just toss all of your ingredients in the crock pot in the morning and let it go for the rest of the day.


This recipe is great, because it’s so versatile. You want to add meat? Ground up some hamburger or ground turkey and throw it in there. You can add cheese to the top, avocado, sour cream, green onions, cilantro or anything else your heart desires.


Crock Pot Three Bean Chili

Ingredients:

2 15 oz cans Bush’s Best Kidney Beans (reduced sodium), drained
15 oz can Bush’s Best Black Beans, drained (reduced sodium)
15 oz can Bush’s Best Pinto Beans, drained (reduced sodium)
15 oz can diced tomato
2 large green bell peppers, diced
1 1/2 cups corn kernels (frozen, fresh or canned is fine)
1 small onion, diced
2 cloves garlic, minced
2 1/2 cups vegetable stock
1 cup mild or medium red salsa
1 tsp cumin
1 tsp cayenne pepper (or less if your kids are sensitive to heat)
Salt and pepper to taste

Instructions:

1. In your 5 quart slow cooker (for a smaller slow cooker, use only half of this recipe) add the onion, garlic, all of your beans, tomato, bell pepper and corn. Pour in the vegetable stock, salsa, cumin and cayenne pepper. Stir gently to combine.
2. Cook for 3-4 hours on high or 7 on low.
3. Add salt to taste. Ladle into bowls and top with shredded cheese, sour cream or any other toppings of your choice.
