How to  make meatballs like a BOSS
If you’ve ever spent WAY too long in the kitchen rolling meatballs, this post is for you. This is not so much about the recipe or the cooking method of the meatballs, but rather, how to get them somewhat uniform and nice and round in just a few short minutes. I know you don’t have time to be rolling meatballs one by one.

This is such a simple idea. Mix up your preferred recipe for meatballs. I used this really easy turkey meatball recipe. Once it’s all mixed up, you’ll want to kind of pat it into a rectangle like you see above. Try to make it as even as you can.

Next, you make slices in kind of a grid pattern. Do it lightly to start in case you mess up. Once you have it the way you want it, cut them all the way through and you’ll have lots of little meat boxes.

From here, it’s really easy to take your cubes and roll them up.

Just keep rolling them all until you end up with a bunch of meatballs. So quick and easy! Hope this tip saves you some time the next time you make meatballs.

Copycat In N Out Double Double Cheeseburger Recipe & Sauce

Cheeseburger Recipe
As a former Californian, there is nothing quite as coveted as getting to taste the delicious In N Out Burger. If you have the luxury of living near one, you probably know what the fuss is all about. If you’ve had their burgers and don’t live near one of their locations, you may be longing for the awesome taste as I am. I have been missing it so much that I decided to find an acceptable copycat version of the cheeseburger recipe (the Double Double, to be exact) which includes the special sauce. This one, while not exactly the same, comes close enough. My family devoured it and was begging for more. I will be making this again soon. Real soon. Let me know what you think of it.

Copycat In N Out Double Double Cheeseburger Recipe & Sauce

What you’ll need:  
Plain hamburger buns
Ground beef – 1/3 pound ground beef per burger
Dash of salt
Special sauce (recipe below)
Tomato slices – One big, thin slice per burger
1 large lettuce leaf per burger
2 slices real American cheese per burger
1 whole onion thin slice (optional) per burger

SPECIAL SAUCE
1/2 cup mayo
2 Tbsp. ketchup
1 Tbsp. white vinegar
1 tsp. sugar
2 tsp. sweet pickle relish

Instructions:

Stir sauce ingredients together until well mixed.

Preheat your frying pan  or electric griddle with medium heat. If the weather is nice, you could also BBQ, but the burgers would probably hold together better on a pan or griddle.

Lightly butter and toast the both halves of the hamburger bun, face down in the pan. Set aside.

Separate the beef into two equal portions, and form each half into a thin patty slightly larger than the bun.

Lightly salt each patty and cook for 2 to 3 minutes on the first side.

Flip the burgers over and immediately place one slice of cheese on each one. Cook for 2-3 minutes.

Assemble the burger from the bottom to the top in this order:
(The stacking order is of the utmost importance. Be sure to follow closely for best results. )

Bottom Bun
Special Sauce
Tomato slice
Lettuce
Beef patty with cheese
Onion slice (optional)
Beef patty with cheese
Add a little more sauce
Top bun

Fall is one of my favorite seasons. I love the sights and smells that come with fall. I love the cooler weather it brings, watching the leaves change color and all the yummy beverages that accompany it such as apple cider, pumpkin lattes, you get the idea. To help me get ready for fall this year, I was sent a fun Febreze Fall Home Harvest Collection Kit. Isn’t the barn box just adorable? My daughter loves it.

I immediately set up the fragrances in my home and the vent clip in my car. I love that Febreze truly eliminates odors so your guests only notice the freshness of fall.

Since I am a bit of a coffee-holic, I chose to try this recipe card from my Febreze activity box: Make an Iced Coffee Float. Yum! For those of you who like to copy and paste recipes, I’ll type this one up for you below so that you can make it yourself. It’s quite the delicious treat. You can see how mine turned out in the picture below. Heavenly.

Iced Coffee Float Recipe

ICED COFFEE FLOAT

What you need: 8 ounces of coffee and vanilla ice cream.

1. Brew coffee as you normally would.
2. Place an 8 oz. cup of coffee into the freezer to cool for about 10 minutes. You don’t want it to be hot, so somewhere between warm and cold is perfect.
3. Take your favorite glass, and scoop two heaping scoops of ice cream. You can try it using your favorite ice cream flavor too.
4. Pour your coffee over the ice cream and enjoy!

Thin Mint Chocolate-Drizzled Pretzels

Ingredients:

1 cup (6 ounces) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 tablespoon vegetable shortening
1/4 cup NESTLÉ® COFFEE-MATE® GIRL SCOUTS® THIN MINTS® Liquid Coffee Creamer
8 cups mini pretzel twists, pretzel thins or whole-grain crackers
Instructions:

MICROWAVE morsels and vegetable shortening in small, dry, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted. Add Coffee-mate to chocolate mixture and let stand for 2 minutes without stirring. Stir until smooth.

PLACE pretzels on cooling rack(s) with parchment or wax paper underneath to catch any drips. Or, line baking sheet(s) with parchment paper and place pretzels directly on parchment. Spoon chocolate mixture into heavy-duty quart-size food storage bag; cut tiny corner off with scissors and squeeze to drizzle over pretzels.

LET chocolate set at room temperature for at least 2 hours. Or to speed process, refrigerate for 1 hour to set the chocolate. Remove from refrigerator and keep at room temperature until chocolate is firm. Once firm, store coated pretzels in airtight container at room temperature.

For this review, I was sent a gift pack that contained two cans of Del Monte Southwestern-Style Petite Cut Diced Tomato varieties and a $25 gift card so that I could buy other meal items.

I was really excited to try these tomatoes and I decided to go with a Southwest Chicken recipe that I found on Allrecipes.com. It’s a pretty quick and easy dinner. I used the Del Monte Petite Cut Diced Tomatoes with Green Chilies. I was concerned that it would be too spicy for the kids, but it turned out to have only a mild kick to it. I didn’t tell them it might be spicy and they didn’t complain, so that was s good thing for my family. All in all, everyone gobbled it up and seemed to be pretty full and happy. Here is the recipe that I used in case you’d like to try it.

Southwest Chicken

Ingredients:
1 tablespoon vegetable oil
4 skinless, boneless chicken breast halves
1 (10 ounce) can diced tomatoes with green chile peppers
1 (15 ounce) can black beans, rinsed and drained
1 (8.75 ounce) can whole kernel corn, drained
1 pinch ground cumin

Directions:
1. In a large skillet, heat oil over medium high heat. Brown chicken breasts on both sides. Add tomatoes with green chile peppers, beans and corn. Reduce heat and let simmer for 25 to 30 minutes or until chicken is cooked through and juices run clear. Add a dash of cumin and serve.

DIY Crockpot Yogurt

One of the ways I’ve found to stretch my dollars is to make my own yogurt in a crockpot. Yep. It really does work. It’s not quite as thick as what you buy at the store, but it’s still very yogurtey (is that even a word?) and the best part is that you know what’s in it and you can sweeten it however you see fit (ex: sugar, honey, agave nectar, fruit).

The nice thing about yogurt is that it is a very versatile food. Some of the many ways you can use yogurt are in homemade salad dressing, frozen fruit pops, smoothies, you can coat chicken with it before dipping in breadcrumbs to bake and of course, you can just eat it with some fruit added. I’m sure there are many other great ways to include yogurt in your everyday recipes. Let me know your faves.

To make the yogurt you will need a crockpot, 1/2 gallon of whole organic milk and 1/2 cup of plain natural yogurt (to use as a starter).

The process of yogurt making is really simple, but time consuming, so make sure to try this on a day when you will be home all day.

DIY Crockpot Yogurt

1. Pour 1/2 gallon whole organic milk into the crock put. Cover and heat on low for 2 1/2 hours.

2.  Turn off or unplug your crockpot. Let it sit for 3 hours.

3. After three hours, take 2 cups of the hot milk and put in a bowl. Mix in 1/2 cup of plain natural yogurt in with a whisk. Then pour the mixture into the crockpot and stir. Replace crockpot lid.

4. Cover your crockpot with a heavy towel or blanket for insulation. Let it sit for 8 hours.

5. After 8 hours have passed, it’s time to see what you made. Pretty nifty, eh?

Separate into plastic containers and chill. This yogurt will keep for about 5-7 days. Be sure to save 1/2 cup to make your next batch. Enjoy!
